I've been staying away from SC since the last patch, as it had a few annoying bugs.

 

I fancy giving it a go one eve this week.

Yep, but if you lower graphics settings you'll have no bother. Extra RAM won't hurt [emoji16]

I already have 16 (2x8) GB of RAM and I thought mine would be powerful enough now to not adjust the settings?

Then you have plenty, you should be fine on high settings
