Pre-installed apps that are not really needed is called bloatware. Usually you need to root your phone to use apps like Titanium Backup which can un-install or freeze them. Rooting can be risky if you don't know exactly how to do it but there are good tutorials on the internet. One thing to keep in mind is that it voids your warranty if it breaks and you return it rooted. There's is a built in counter that show how many times the software has been modified. This can be fixed too but as said before it's quite risky so you need to know what you're doing or the phone might end up in an unusable state.
