Home Made Pasta

Plumbers Crack

Recommended Posts

Have never tried home made pasta before as all the machines had base clamps which we couldn't use with our worktops but, finally, Santa found this which has a suction base..

Haven't used it yet but hope to this weekend

Has anyone got any good recipes for ravioli or tortolinni fillings?

It looks a great piece of kit Dave, it seems a lot of hassle though. Hayley buys the ready made paste sheets sometimes for a lasagne.

What pasta dishes do you usually like?

OK Tagliatelle Primavera

Serves 4

400g of egg Tagliatelle, either dried (check the amount), fresh from deli or home made....

for the sauce....

8 tablespoons of olive oil

2 red onions, peeled and thinly sliced

2 yellow peppers halved, deseeded and cut into 1 cm cubes

1 red pepper halved, deseeded and cut into 1 cm cubes

1 courgette (zuccinni?) trimmed  and cut into 1 cm cubes

1/2 teaspoon dried chilli flakes

1 tablespoon fresh thyme leaves (I didn't have any so I used a smaller amount of dried thyme)

Salt to taste

Heat the oil in a large frying pan over a medium heat. Fry the onions, peppers, courgette, chilli and thyme, stirring occasionally with a wooden spoon, for approx 8 minutes until just softening. Season to taste with salt and set aside

Cook the pasta in a large pan of boiling water until al dente. Drain and tip back into the same pan. Pour in the sauce , place the pan over a low heat and toss everything together for 30 seconds to allow the flavours to combine. Serve immediately

Taken from 'Gino's Pasta - Everything You Need To Cook The Italian Way' by Gino D'Acampo published by Kyle Books

The combining part didn't go too well as you can see as I used too small a pan but it still tasted terrific. Definitely be using the pasta machine again!

That's awesome Dave! Just missing the meat mate [emoji12]

I shown Hayley and she asked where you got it from so she can buy it for her best friend. I can see the amazon link says currently unavailable so didn't know if it was from a local shop?

I'll see if I can grab some recipes from her and add them. [emoji106]

Looks like someone spilled rabbit food all up in your dish man.

Add some steak or something!

(looks good minus the onions)

Luke 23:34
'And Jesus said, "Father, forgive them, for they don't think it be like it is, but it do."
